I would assume that NPC levies raised have a moral system in place, if a NPC unit is placed in an area where they have no chance of retreat except through an enemy army, will the unit fight to the death, or attempt to flee through the enemy army.


The supreme art of war is to subdue the enemy without fighting.

NPCs have different personality traits, some might fight and others will try and run, they have predetermined Fight or Flight mechanics.

No idea how the game will handle it, but a unit in that position would probably neither flee nor fight to the death. It would surrender.
