My GF and I will be playing CoE but when she created here account she used my E-mail address. Can you tell me how to replace her Name and Info with me. then she can Create her account and we both con post under separate accounts.

No need. Click your username in the top right corner. Click the "Email tab". There's an option on there ;)
I don't quite follow your post though - I assume you mean you want to put her email address in, so you can create your own seperate account?
