There are attributes like stenght and stamina that you have to train in order to increase them. Age is also a factor that affrcts your attributes and how easily you can train them. You can read more from this Design Journal or from Wiki.

Wondering then if a beginning player could kill a very experienced player if he has better gaming skills. Is there gear related stats like damage and armor class that would give the more experienced player an advantage since they can afford such or have won them in battle?
The devs have stressed that this game will be very reliant on player skill, not character skill. So a skilled newbie will beat the scrub veteran any day. In addition, they've mentioned that their won't be 'better' armor in terms of stats or percentages, it will depend more on where you are covered.

Build quality of the armor and materials used would also come into play. Cheap plate will allow an arrow to puncture it irl, properly tempered plate with quality steel won't (at least not anywhere but various joints). I would expect similar results here.
The largest difference between a vet and a newbie, other than stats like stamina and strength, will be the move sets available for them to use. The newb may just have simple single attacks and a simple block available. The vet may have whole attack chains, and combos that work off of a riposte, and a disarm attack to work with.
