Here's the problem, Elyria isn't so cut and dry. It's people's choice. I like how it isn't like WOW.
I'm actually creating a categorization of jobs and tasks. I would like some help and feedback. You seem to know more about the game than me with 240+ posts. If you're interested, could you send a message?
There will never be a full list of roles, this is such an open world and with the contract system. There are so many ways to play this game and be successful. You may as well just list all the possible professions and past times based on the technology available. I started doing one per letter of the alphabet to prove a point but got bored at 'j' and could do multiple for each (Antiquities Specialist, Bee Keeper, Civil Engineer, Defense Lawyer, Entroprenour, Firefighter, Gladiator, Hired muscle, Interior Designer, Judge, etc.)
I do not believe I have seen 'saint' ever mentioned by the developers, and Liches and Vampires are not really roles. They are very rare features that will be added after launch.

If you read carefully what I wrote in the OP, you will realize that I am as aware of what you point out as you are, since I wrote "feasible general" roles. In that perspective there are only a limited number of roles one can take on and among those roles there are some that even have a maximum number on them. As for the Saint part, I explained what it is in the brackets, and what it states there was mentioned by Caspian.
Finally just to be clear, since it seems like everyone is just nitpicking nowadays instead of actually helping when asked on these forum, I am not compiling a full list of possible roles with every possible aspects, I am trying to cover the whole spectrum of possible roles though, that can be feasibly taken up on in regards to what we currently know about the game, so as we get to know more some might be added or removed.
The whole point of this list is to provide perspective and ideas to those whom are having a hard time choosing a role or roles since you might be able to take up on more than one if they overlap enough.
I do need help compiling a full enough list since I might overlook certain roles, such as VictoriaRachel mentioned, beekeeping. At the same time using her examples defense lawyer is just a lawyer and civil engineer is just a Scribe, so I try to generalize the roles as much as possible. These being said, Blacksmithing and Weaponsmithing is separated even by the game mechanics (as far as we are aware) not just by a set of skills so they deserve a separate role even on a generalized list.
So if you guys think I missed something let me know and I will add it to this unofficial fan mad list of general roles.

We know there are libraries as commercial building.
That's why i believe there can be librarians.

Antaryon, I understood what you were trying to accomplish. I thought it went without saying that it was an open world and saw your list as just trying to show how vast the opportunities are.
As for occupations, how about:
Cobbler (shoe maker)
Cooper (cask/barrel makers)
Coffin maker (sometimes this can be the same person who makes barrels)
Spy
Wainwright (wagon maker)
Weapons trainer
Wheelwright (wagon wheel maker)
I figure I'd be a word of the state who grows to be a Hunter/Tanner/Fisher. And like any good hunter I'd make sure I'd be hunting game that is adult and meaty. Maybe make sure others aren't just killing game for the sake of killing.
Also. I'm wondering if I should put Weapon smith on my in game resume so as to craft bows, arrows and maybe even firearms?
I could easily see myself out hunting and perhaps I'd be able to save a lost traveler from a pack of wolves or a group of bandits. Or maybe be the huntsmen who saves little red riding hood's grandmother.
STARWATER
We do have the basis role categories from SBS. I think it would be interesting to map this list into them - and see if some roles are hard to place (meaning we may need additional categories).
