As you can see, I've tried to use the hex value but that, um...didn't work.

I've seen others with spaces so how do we do that?

I believe after a certain site update it wasn't then available. So people with spaces chose those names before that update. (I think the 'Great Migration' was the update, could be wrong)

There's also the underscore_option

It's a little less busy looking than the hex value.
