I can't seem to find this question answered, but are the servers 24/7/365 (aside from maintenance), do they get reset at any point (it would seem unlikely due to the mechanics of the game), and I know there is a vague soft release date but any idea of if that is getting pushed back (most games do, very understandable).

I believe they are 24/7/365 except for updates/maintenance. Some phases will have soft resets, like kingdoms of elyria but once expo starts there will not be one. No clue when it is coming out so someone else will have to answer that.
