IMO, the contract system will most probably work as a drop-down menu that increases in complexity with the scribe's level/skill. By complexity, I mean something along the lines of adding duration/deadline of the contract.
I doubt the system will be "holistic" enough for you to create something convulated or extremely detailed documents such as state constitution, NDAs, etc.
I'm really interested in being an in game scribe. Curious if the best thing to do with it is contracts or what other options are. Not that the contracts aren't interesting. Kinda like being a notary irl.

I hope you are wrong, but this is the reason why I posted this here and not in the organizations forum. I wanted to discuss all of this and even maybe influence how they will implement the contracts in the game.
With the information we have, we can speculate in all directions and this was the direction I was aiming for. Maybe we'll see simple drop-down menus, but let's hope they can achieve more than that since, from my understanding, contracts were very important to Caspian.

I'm pretty sure scribing will be much more than contracts. I read that Snipehunter really liked the idea of player written scrolls in Ultima Online. Maybe one day adventurer will travel the land to find rare scrolls that were written by us, scribes of Elyria.

That would make sense. Whenever you learn the recipe for a type of contract then you get a new item in the dropdown menu. AFAIK This is how the rest of the crafting system works.
One interesting idea that's been tossed around a bit is the notion of player-kept records of historical events. If scribes are capable of producing written documents (and I don't know if they will be, but it was mentioned previously as a future possibility), and assuming the game world will automatically track recent lore through NPC gossip and location names, anyone who wants more detailed records of notable in-game events could be responsible for filling in as a historian of sorts. Granted, these historians would likely be in the employ of a larger entity or specific kingdom and be biased toward one side or another, but hey, it's not like that never happens IRL.
For scribes whose main focus is on contracts, I would imagine that they would want to produce written records of contracts at various points, including the time of initiation, the involved parties, and the end result(s) of said contract just so they'll be able to track these exchanges in the event of a crime or conflict of interest. This is purely hypothetical and mostly for players who are serious about their in-game profession, but more often than not, it could prove useful to have backup records in the event that a contract is destroyed or stolen after the fact.
Either way, why not leave written records of players' history and business deals for future characters to discover and reference? It's worth consideration.
